It actually makes little sense to have a server system based on brand new desktop systems with the latest fancy features which will never be used on a server, and for that matter I don't get why we actually need the overhead of a GUI on macOS server given that you can manage the system from an admin computer running the graphical tool. In the Linux world it is very common for the enterprise server systems to be older versions of software that have had time to mature and benefit from extensive testing and hardening, frankly I wish Apple would do the same. To use macOS Server with macOS Monterey, update to macOS Server 5.12. macOS Server 5.11.1 and earlier is not compatible with macOS Monterey. To use macOS Server in macOS Monterey, a newer version of macOS Server is required. The only thing you can do is restore the whole system from a Time Machine backup, or other full system backup like ASR. Prepare to update macOS Server in macOS Monterey.
